Cookies with two types of filling
This shortbread dough, made according to the classic 3-2-1 recipe, combines two types of dough: delicate buttery or vanilla and rich cocoa. The product can be filled with two different fillings, such as cream and jam, or other combinations of choice.
The cookie is shaped on a guillotine belt using a pneumatic knife, and its length is adjusted via the control panel of the forming machine. The top part of the product can be decorated with a pattern, as seen in the image, or undergo additional processing—flattening or scoring with a special roller that changes its shape.
The finished cookie can be fully coated in chocolate, glazed only at the bottom, or decorated on top. Additionally, extra coatings and sprinkles such as nuts, coconut flakes, poppy seeds, sesame, or coarse sugar can be applied.
Depending on the required production volume, this product can be made using stationary equipment that shapes it.
For high-volume production, such as 500–1000 kg/h, it is recommended to use industrial machines that automatically dose the dough and filling directly onto the conveyor belt of a tunnel oven.
