Cookies with date filling
This shortbread dough, made according to the classic 3-2-1 recipe, can be filled with date or any other fruit filling, as well as cream. The finished product is cut on a guillotine belt using a pneumatic knife. The length of the cookie is adjusted via the control panel of the forming machine. The top part of the product can have a pattern, as seen in the image, or be additionally flattened or scored with a special roller, giving the cookie a unique shape.
This type of cookie can be fully coated in chocolate, glazed on the bottom, or decorated on top. Additional coatings and toppings, such as nuts, coconut flakes, poppy seeds, sesame, or coarse sugar, can also be applied.
Depending on the required production volume, this product can be produced either on stationary equipment that shapes it or on industrial production lines.
For high-volume production, such as 500–1000 kg/h, it is recommended to use industrial machines that automatically dose the dough and filling directly onto the conveyor belt of a tunnel oven.
