Traditional shortbread cookies, especially popular in the Middle East, with a date paste filling, as well as pistachios, almonds, or walnuts.

For the production of such sweets, a forming machine with a diaphragm option is used, which allows for simultaneous filling of cookies with stuffing while shaping them into a round form.

In most cases, these cookies are additionally stamped, allowing the creation of various patterns and designs on the top of the product, giving it a unique appearance.

Depending on the required production volumes, such cookies can be produced on specialized machines.

For high-volume production (500–1000 kg/h), we offer industrial versions of machines, which automatically dose dough and filling directly onto the conveyor belt of a tunnel oven.
