Gingerbread with filling
Sweet or savory cookies with a long shelf life, generously seasoned with spices. As a filling, various fruit flavors are commonly used.
The durability of gingerbread for storage is ensured by its high spice content as well as its hardness and low moisture content. Thanks to this, they can remain fresh for several months if stored in a dry and cool place. The composition of spices varies depending on the recipe and regional traditions.
After baking, gingerbread undergoes a moisturizing process and can be covered with glaze, which adds softness and extends shelf life.
For the production of such products, specialized machines are used to shape the dough while simultaneously dosing the filling inside. The cookies are then cut using a diaphragm mechanism, which securely seals the filling inside.
Depending on production volumes, this product can be produced using stationary equipment, forming it, for example, in the shape of cylindrical products, as well as on high-performance industrial lines (500–1000 kg/h), where dough and filling are automatically dosed directly onto the conveyor belt of the tunnel oven.
